Green Organic® Edamame Hummus
4 cups (1 L) water
1 tsp (5 mL) salt
2 cups (500 mL) Green Organic® Shelled Soybeans (Edamame)
6 tbsp (90 mL) freshly squeezed lemon juice
1/4 cup (50 mL) chopped parsley
2 tbsp (30 mL) tahini
1 tsp (5 mL) Green Organic® Pureed Garlic
1/4 tsp (1 mL) cumin
Salt and cayenne to taste
- Bring salt and water to a boil. Add edamame and cook uncovered 4 minutes. Strain, reserving 1/2 cup (125 mL) of cooking liquid. Set aside.
- Puree edamame with remaining ingredients in food processor. With motor running, slowly add reserved edamame cooking liquid and process until desired texture is reached (this may take a few minutes). Adjust consistency with additional water or cooking liquid if desired. Season to taste. Refrigerate until cold.
Yield: 2 cups (500 mL)
